Cacao Almond Cookies 

Who doesn’t love cookies? Growing up I would distract my mum so I could eat the raw cookie dough. It usually resulted with me feeling ill, but it was always worth it! image
I love baking cookies and I must admit I still sneak a taste of that delicious raw cookie dough. We all do it, right? That’s what I tell myself when I do.

Cacao? If you had asked me what that was a couple of years ago, I wouldn’t have had a clue, but now I use it in all of my sweets treats. I love the bitter chocolaty taste. 

I pulled out my Nutri Ninja, collected my ingredients, mixed them altogether and I was off in cookie dough heaven. 

Ingredients: 

1 cup of almond meal

2 tbs of coconut oil

2 tbs of rice malt syrup

2 tbs of cacao powder

Pinch of sea salt

Preheat the oven to 170 degrees and line a baking tray with baking paper. Mix all of the ingredients in a bowl and make small little balls out of the dough. (use a tablespoon to help you) Place balls on tray and press down with your thumb. Bake in the oven for approximately 10 to 12 minutes.
