Probably two of my favourite veggies in this fritter. I absolutely love zucchini and corn. So very simple, but very, very tasty! Most of the ingredients come out of my veggie patch too.
I can usually make these fritters in less than 10 minutes, so they are a healthy alternative to fast food. This is my kind of fast food with a delightful salad and juice! (Watermelon works well) I’m in fritter heaven!
1 large zucchini
1 cup of corn
1/4 bunch of spring onions
2 eggs
1/2 cup of gluten free flour
Salt and pepper
Grate zucchini and sprinkle some salt on top. Leave for a couple of minutes and squeeze out excess water. Cut spring onions and mix all remaining ingredients together in a large bowl. Sometimes I like to add parsley, but a dash of cracked pepper works well. Cook on medium heat with some coconut oil until fritters are golden brown.
