Chilli Zucchini Fritters 

Great for meal prepping and so very simple, but very, very tasty! All of the ingredients come out of my veggie patch too, except the flour of course.

 I can usually make these fritters in less than 10 minutes, so they are a healthy alternative to fast food. These are great for lunch boxes, breakfast, lunch or dinner with a nice salad or if you want a healthy snack.

Ingredients:

I zucchini

1 egg

Pepper

1/4 cup of gluten free flour

Chillies

3 spring onions

Grate zucchini and sprinkle some salt on top. Leave for a couple of minutes and squeeze out excess water. Cut spring onions and chillies. Mix all remaining ingredients together in a large bowl. Add a dash of cracked pepper. Cook on medium heat with some coconut oil until fritters are golden brown.
