Cauliflower Fried Rice 

I have a love hate relationship with cauliflower and usually the cauliflower goes bad in my fridge before I decide I want to eat it!


Ingredients: 

1/2 cauliflower (mine was about 400grams) 

1/4 of cup of corn

4 chopped spring onions

1/4 of a cup of chopped red capsicum

Small handful of coriander cut roughly 

1 tbsp of ricce bran oil 

Cumin, chilli and garlic 

Chop cauliflower up and blend in blender until it breaks up. Put cauliflower in baking dish and add oil and a sprinkle on cumin, chilli and garlic. (it’s up to you how much) Cook for approximately 30 minutes on 180 degrees. Stir every 5 to 10 minutes. Once cauliflower is cooked add chopped spring onions, capsicum, corn and coriander and mix all together.
