Pecan & Walnut Surprise

I never really like pecans and walnuts growing up, but considering on a low fodmap diet cashews are out I’ve had to get inventive. 

I believe they’re a great source of protein, so this slice or as I like to call it surprise must be a winner.  I call it surprise because it isn’t a surprise when you’ve eaten half of it in one sitting. I don’t recommend that at all. 


Ingredients: 

1/2 cup of pecans

1/2 cup of walnuts

1/2 cup of desiccated coconut

2 tbs of rice malt 

2 tbs of cacao powder

1 to 2 tbs of coconut oil 

Combine all of the ingredients in a blender and then press mixture in to a plastic container lined with cling wrap. I use cling wrap as it’s so easy to remove and use. Place additionally pecans or walnuts in to the slice and freeze for approximately 10 minutes. Cut up into smaller portions. 

Makes 12 serves
